Information: Lab Room is where coffee steps out of routine processing and into controlled experimentation. Small lots, tightly monitored fermentation, and intentional risk taking to push flavour further than usual. This Ratnagiri lot is a result of that mindset. Naturals, but not casual ones. The cherries are handled like a live experiment temperature, airflow, and drying all dialled in to shape the cup, not just preserve it. What shows up is loud and precise at the same time.
