Roaster Notes

Étoile Noir is robusta from Kaapikaadu Estate in Karnataka, fermented with a champagne yeast. The ferment gives the species something it rarely has: sparkling fruit and layers of sweetness. We roast it medium light. On filter it tastes of white grape with a champagne edge, then candied pear as the cup cools. As espresso it moves to demerara sugar and dried fruit over a dense, syrupy body. Brew it as pour-over or espresso.
