Roaster Notes

Four 100 g bags where the fermentation, not the origin, is the story. OBSIDIAN is Canephora from Ammikulavi Estate in Tamil Nadu, fermented sealed for 96 hours. CULTURED 42 is SLN 9 from Kerehaklu Estate, washed after 42 hours of anoxic fermentation. ÉTOILE NOIR and MALTLINE are Canephora from Kaapikaadu Estate, fermented with champagne yeast and with Kölsch beer. Three of the four are Canephora, and all four are roasted light to medium light.
