UDAYGIRI CASCARA — Coffee cherry tea

Every coffee bean grows inside a cherry. At the mill the bean comes out and the fruit around it is usually composted. This is that fruit, dried on raised beds at Udaygiri Estate, kept back and sold as tea. It is called cascara, and it does not taste like coffee. The cup runs to dried cherry, hibiscus and raisin, with a honeyed finish. Steep it hot, cold-brew it in the fridge, or use the cold brew as a base for tonic or soda. It is low in caffeine, roughly a quarter of a cup of coffee.
