As filter : Dried date · Cocoa nib · Sweet lime As espresso : Raisin · Dark caramel · Soft citrus A 100% Arabica from Kaapikaadu in Karnataka, grown by Mr. Lobo. Whole cherry, sealed away from oxygen, fermented with EM5 — a live culture rather than a lab strain, which keeps the ferment slow and the acidity round instead of sharp. Dried on the fruit and roasted medium light.
