An Obata sealed with a wine yeast and dried inside its own fruit. As filter Red grape · Dried fig · Jasmine lift As espresso Cocoa · Stewed plum · Red wine finish Obata from Melkodige Estate in Chikmagalur, Karnataka. The cherry goes into the tank whole, a wine yeast goes in with it, and the oxygen is shut out. What follows is closer to a short maceration than a coffee ferment. Dried slowly on the fruit afterwards, which is where the fig comes from.
